Results of recent Gwinnett County restaurant inspections in Snellville by East Metro Public Health with a synopsis of deficiencies found by the inspector. These are reports over the past week.

Deficiencies observed: Buildup of grease deposits on the exterior of the pizza pans, (b) fans, gaskets, and air curtains of coolers have a buildup of food debris and/or dirt.

Deficiencies observed: Melted cheese cooling since yesterday. Containers of stacked melted cheese on the shelf did not reach 41F within 6 hours, (b) raw beef cooled 2 degrees in an hour.

Deficiencies observed: Several packages of cooked ready to eat eggs were found in the walk in cooler held past the use by date. The person in charge discarded the eggs at the time of inspection.
Name: G'Angelo's Pizza and Main Street Restaurant

Deficiencies observed: In the 3-door cooler, raw ground beef is stored directly above ready-to-eat deli turkey AND raw chicken is stored directly above ready-to-eat deli ham. (Rearrange the storage of raw meat with ready-to-eat food. Place the raw meats according to cooking temperature and place the ready-to-eat food higher than the raw meat.) Ready-to-eat food must be protected from cross-contamination during storage, preparation, and handling. Store the ready-to-eat food above raw animal food. The dishwashing machine is not dispensing sanitizer at adequate concentration for the sanitization of food-contact surfaces. The most recent inspection report is not on display in the main dining room.

Deficiencies observed: Hand sink next to the fryer was being used to store boxes of bags. Hand sink must be used for hand washing only. Employee handling pizza toppings with bare hands with long, painted black artificial nails. Employees must keep their fingernails clean and trimmed to no longer than the tips of the fingers. Employee preparing pizzas with about 2 inch hair. Employee must use an effective means of restraint for hair, beard, or mustache longer than ½ inch. A baseball cap was donned. The pedal for the hot water was removed; therefore, no hot water for washing hands at the hand sink next to the prep cooler.

Deficiencies observed: Potentially hazardous food items in the walk in cooler were properly date marked and not discarded within 7 days. These items including house mixed butter, mushroom soup, house made cream cheese frosting were discarded at the time of inspection. Several boxes of single use items stored directly on the floor of the dry storage area. The person in charge had these items moved to a proper location.

Deficiencies observed: Washed, unwrapped lettuce is being stored in direct contact with the unclean wire shelving inside the reach-in cooler at station 1. (Discard the lettuce. Wrap ready-to-eat food or place in a clean container with lid.) Food must be protected from cross-contamination by storing the food in packages, covered containers, or wrappings (except for loosely covered, or uncovered containers in which food is being cooled if protected from overhead contamination).

Deficiencies observed: Paper towels are not provided at the hand sink in the prep area. Disposable towel, a hand dryer or single-use cloth must be provided at the hand sinks at all times. Can opener was stored in the holster with visible food debris. The can opener was used the day before. Food contact surfaces must be cleaned at least every 4 hours. Bowls stored on the stove shelf with visible food debris present. Buildup of mold present on the gaskets of the coolers, buildup of dust on the cooler fan.

Deficiencies observed: Employee was observed eating a french fry on the prep line, (b) employee water bottle was stored on the prep line. Employees must drink from a disposable container with a straw and lid in the food prep or food storage area. Tomato slicer with food debris between the blades. The slicer has broken blades.
