Hibachi Buffet Fails Restaurant Inspection, Roaches in Others

Restaurant inspections in Snellville for Feb. 25 - March 3.

Results of recent Gwinnett County restaurant inspections in Snellville by East Metro Public Health with a synopsis of deficiencies found by the inspector. These are reports over the past week.

Name: Antogitos Salvadoreno
Location: 2585 Highpoint Road
Score: 92/A
Previous scores: 88/B, 68/U (Dec. 28, 2012)
Deficiencies observed: Chlorine sanitizer for wiping cloths not being maintained at 50 ppm to 100 ppm concentration. Food pieces and residue were present in the empty wells of the steam table and inside the basin used for storage of clean plates. Employee food items were mingled with restaurant foods inside the 3-door cooler. There was no labeling or identifying marks on the employee food (which was observed with expired manufacturer use-by dates; hot dogs, and luncheon meat). Live roach seen crawling around the clean serving bowls on the kitchen table. Dead insects trapped inside several light shields for the fluorescent panels in the prep area and throughout the restaurant.

Name: Atlanta Bread Company

Deficiencies observed:  Manager in charge was unable to convey knowledge of an employee health policy by specifying the symptoms and illnesses important to food safety. Food-contact surfaces (food containers, mixing bowl, and tomato dicer) have food debris and residue remaining after cleaning. Several foods held past the expiration date: quarts of half/half, a gallon of skim milk, four 5lb tubs of yogurt, and a tub of sour cream. Unwrapped, large sandwich breads are placed into baskets which have not been adequately lined to prevent contact with the baskets. Only one piece of deli paper was used instead of two. Cutting board component of the tomato slicer was coated with a layer of residue which loosens from the surface once scraped. The dishwashing machine had accumulated food particles at the top corners of the wash chamber and at the tops of the doors on the machine.

Deficiencies observed: An employee was observed blowing into a glove before donning glove to work with broccoli. Chemical bottles (3) stored on the preparation table and underneath the compartment sink without labels. Pangasius was listed as catfish on the menu. An employee was observed cutting unwashed broccoli.

Location: 2059 Scenic Highway Suite 117

Deficiencies observed: The person in charge did not display knowledge of the employee health policy, could not identify the 5 symptoms and 5 illnesses to restrict and exclude sick workers. Several raw fish items such as raw salmon, raw tilapia, and masaga roe being served as sushi with no proof of parasite destruction being provided. Both of the ice machines were found with pink/black mold like substance around the ice chute. The can opener blade was found with food debris build up present. A proper consumer advisory is not in place for the raw sushi items served at the buffet. Four unlabeled spray bottles found being used and stored throughout the facility. The facility is serving New Zealand green shell mussels on the buffet yet no shell stock tags/ the boxes are being held on file for 90 days. The facility is not posting the most recent health inspection report in public view and the report is posted behind the counter. A follow up inspection will be done within 10 days and a required additional routine will be done at a later date due to score below 80.

Name: Mah Jong Chinese Restaurant
Location: 1905 Scenic Highway Suite 650

Deficiencies observed: Employees failed to prevent bare hand contact with ready-to-eat food items: Employee was handling and slicing lemons for beverages, employee handled crispy noodles, and employee handled parsley garnish. Employee was handling bowls filled with crispy noodles by the inside rims of the bowls. Employee seen blowing into the gloves to open them for use.  The lids on each white, bulk ingredient container were cracked/broken toward the center.

Name: Steak 'N Shake
Location: 1610 Scenic Highway
Score: 96/A
Previous scores: 100/A, 79/C
Deficiencies observed: Packaged, commercially processed foods for sale to the consumer not removed from sale immediately after the manufacturer’s expiration date or sell-by date. Two cases of expired apples were found in walk-in cooler dated 1/17/2013 and 1/10/2013. After cleaning and sanitizing, equipment and utensils not air-dried. Observed pans stacked wet after being washed. Pans seperated to air dry.

Location: 3951 Stone Mountain Highway
Score: 90/A

Deficiencies observed: Certified Food Safety Manager certificate expired December 2012. The person in charge was unaware of the employee health policy. Cuttting board was in disrepair.
