Remarks: Several foods stored on the prep line to cool were prepped at room temperature and did not cool to 41°F within 4 hrs. Foods are being prepped at room temperature and placed in the top of the prep coolers to cool with the radiant heat of the grill and brick-oven immediately behind them. An empty bottle of ginger ale was stored at the end service line closest to the to-go door. The was a re-useable thermos stored on a prep table next to pans of flour in front of the walk-in cooler. An employee drink was stored over on a rack above an in-use cutting board in a single-use cup without a lid and straw. An employee drink was stored in a reach-in cooler in the to-go area in a single-use cup without a lid or straw. An employee was observed discarding a drink down a handwashing sink.
