Deficiencies observed:   Observed dirty slicer stored as clean with food debris present. in use meat and cheese slicer cleaned at end of day only. Observed chlorine sanitizer measuring 200 ppm in bucket. This is toxic conditions.

Deficiencies observed:  The quat sanitizer used in the facility is being dispensed and used in the sanitizer buckets at a concentration of above 400ppm. The person in charge was advised to have the dispenser serviced to ensure it is producing quat sanitizer at the concentration of 300ppm (200-400ppm). Sanitizers that are quat based should be used at concentration of 200-400pp, to properly sanitize and not be at potentially toxic levels.
