Restaurant inspections in and around Snellville for Sept. 26 - Oct. 1.

Results of recent Gwinnett County restaurant inspections in Snellville by East Metro Public Health with a synopsis of deficiencies found by the inspector. These are reports over the past week.

Name: Applebees Neighborhood Bar and Grill
Location:  1925 Scenic Highway
Score:  86/B
Previous Scores:  95/A, 91/A
Deficiencies observed: 
Cold-held potentially hazardous foods not maintained below 41oF; no time controls/documentation in place. Several potentially hazardous food items including sliced jack, cheddar, american, and swiss cheeses, sliced tomatoes, and raw chicken in the prep and drawer coolers were found holding at a temperature above 41 degrees. The below the grill drawer cooler is not fully closing and the gasket may need to be repaired or replaced.

Location:  2276 Snellville Plaza

Deficiencies observed: Pizza sauce cooling in walk-in cooler in deep pan with tight fitting lid. Rapid cooling methods include shallow pans, ice baths, ice paddles and loose coverings while cooling. Sauce was put into shallow pans, stirred frequently and was put into walk-in cooler partially covered to help accelerate cooling.

Deficiencies observed:
Several working containers of salt, sugar, flour and other ingredients not labeled with the common name of the ingredient. Food not shielded properly on counters, serving lines, salad bars, or other food display. Food coloring used on the banana pudding.

Name: Sushi Avenue Japanese Restaurant
Location: 2118 Scenic Highway Suite F
Score: 84/B

Deficiencies observed:
Employees are handling ready-to-eat foods (sushi meat and hothouse cucumber) with bare hands while preparing the food to be placed into the sushi display cooler. Employee washing dishes and cleaning general surfaces throughout the kitchen is wearing a cap to restrain her hair. However, the cap is not effective in doing so because her hair has not been pulled back before wearing the cap. Hothouse cucumbers were sliced prior to washing.
