Results of recent Gwinnett County restaurant inspections in Snellville by East Metro Public Health with a synopsis of deficiencies found by the inspector. These are reports over the past two weeks.

Deficiencies observed: Foods, including sliced tomatoes, sliced cheese, and bacon cheddar hush puppy mix were not maintained at the right temperature; green beans not cooled properly; no tongs for self-serve lemons and the lemons were not properly protected; one of the prep coolers not kept at right temperature; metal covering at entrance of the walk-in freezer missing screws; and a broken light fixture.

Deficiencies observed: Ice machine with buildup of black "mold-like substance" around the ice chute; refrigerated, ready-to-eat, food prepared and held in restaurant for more than 24 hours without dates by which food must be consumed, sold, or discarded; two chlorine sanitizer rag buckets at wrong level of concentration; and no label for containers with sugar and salt.

  • Meat slicer and tomato slicer with food pieces remaining after the equipment was cleaned and store.
  • Automatic ice maker for drink machine with mold on the upper chute.
  • Sliced salami, sliced ham, sliced turkey, and marinara sauce not labeled with dates after packages were opened.
  • The digital thermometer not functioning.
  • Expired food service permit is on display. Need to post current one.
  • Single-service beverage cups stacked above the single-serve dispenser for customers to pull their own cups. Single-service items for self-service are supposed to be stored in a way that protects against contamination from touching and sneezing/coughing.
  • The cutting board at the vegetable sink "excessively soiled."
  • There are dead roaches present in the facility, including inside the ice bin, basin of the dish-washing sink and on napkin dispenser.

Deficiencies observed: Hot fajita chicken wraps placed under time control without proper labeling for containers of food, cheddar cheese with wrong time control information labeled, and marinara sauce and miniature burgers labeled with wrong time/dates.

Deficiencies observed: Leak at hand-washing sink, and vinyl walls at the dish-washing had splattered residue, sealant for sink had gaps, and food debris between hot-holding machines.

  • An employee sitting at the bar handling and slicing lemons with bare hands.
  • Some employees chewing gum while serving food and beverages to customers.
  • Improper storage of raw animal foods, including raw shrimp and raw steak.
  • Soda dispensing machine at the bar "severely" molded.
  • Boiled chicken, salsa, and refried beans not cooled to proper temperature.
  • Marinara sauce not transferred into a food container after opening.
  • The refrigeration unit inside the walk-in freezer had a disconnected drain line.
  • Sink sprayer hanging below the flood rim for the two compartment sinks.
  • Both faucets at pre-wash sink leaking water.
  • Wall tile and baseboard eroding and need proper sealant and repair.
  • Roof/cieling leaking above food prep area
  • No protective shield for fluorescent lighting panel above buckets of tortilla chips.

Deficiencies observed:

  • Person in charge during the inspection was unable to show knowledge of proper holding temperatures, cooking temperatures, storage of raw animal foods, datemarking/shelf life of foods, and the employee health policy.
  • Improper storage of raw foods near read-to-eat foods, including raw chicken and raw egg shells.
  • The printed menus did not disclose which foods may be ordered undercooked, and there was no advisory statement on the menus regarding these foods.
  • Brunswick stew, barbecue pork, grilled chicken and pulled pork not properly dated and labeled.
  • No covered trash can in the restrooms.

Score: 81/B

Deficiencies observed: Cook did not wash hands between changing gloves to handle cooked shrimp, food advisories and corresponding asterisks not present on some items on the menu, wet cloths for cleaning kept on the cutting boards and prep surfaces instead of being stored in santizing bucket, server's fingers touching too deeply inside salad bowl, and serer seen touching rim of glasses and then serving beverage to customers.

Deficiencies observed: No paper towels in men's or women's restrooms, "mold-like" substance around chute area of ice machine, some foods not properly dated, raw fruits and vegetables not thoroughly washed in water to remove dirt (employee seen getting a head of lettuce from the walk-in cooler cutting it for service without first properly washing it).

Deficiencies observed: Open packages of deli meat slices (turkey and roast beef) not properly dated; and no posting about washing hands in restroom area, which is used by both cafe workers and gym members.

Deficiencies observed:

  • Employee observed handling raw beef and other foods at same time.
  • Reserve supply of sanitizer was out.
  • Food debris remaining on food dicer after cleaning, and "severe" mold on plunger of dicer.
  • Sliced cheese and raw shell eggs not kept at correct temperature.
  • A stack of unwrapped sliced cheese placed in direct contact with the lid of a container of onions.
  • Employee handled raw animal food then ready-to-eat foods with same pair of gloves.
  • Bucket used to hold sliced cheese cold had large opening at seem, making bucket useless.
  • Water leaking from the vegetable sink.

December 11

Deficiencies observed: Chemical sanitizer was found stored above single use items such as small cups and plastic cups, two muffin pans stored on the floor, Dumpster not closed, and Dumpster had build up of trash.

December 12

Deficiencies observed: 

  • Manager unable to show knowledge of cooking temperatures, manual dish-washing procedure, proper storage of raw animal foods, and the employee health policy.
  • Employee using only one glove while slicing onions. The gloved hand was holding the knife handle, while the bare hand was touching the onions.
  • A number of raw foods improperly stored, including raw chicken, raw egg shells and raw beef. Improper storage poses danger for cross-contamination of ready-to-eat foods.
  • Prep utensils not properly cleaned. Employee observed only rinsing utensils with water.
  • Garlic with oil held at wrong temperature on the cook's table with other sauces and seasonings. Also, there was no labeling or documentation for the use of time as a control.
  • No labels for: cooking wine, liquid margarine, and vinegar.
  • No digital thermometer for taking temperatures of food, such as the chicken, shrimp, and beef strips.
  • Bamboo shoots, baby corn, water chesnuts, and oyster sauce stored inside the opened original cans.
  • Bucket of sanitizer in direct contact with the floor.

Deficiencies observed: Yogurt cups, cream cheese, and whipped spread held in display fridge at improper temperature; eggs, sausage gravy, and waffle batter not labeled with discard times; internal thermometer for the mini-fridge is inaccurate; and protective "sneeze" shield raised too high for bread, eggs and sausage gravy.

Deficiencies observed: Window cleaning solution used to clean and sanitize the dining tables instead of proper sanitizer, maple walnut topping and cherries are not protected with shield, and boxes of cups for yogurt are stored in direct contact with the floor.

Deficiencies observed: Employees observed working with foods without hair restraints, employees observed with bracelets while working with food, multiple sanitizer cloths stored on food prep areas and not in sanitizing bucket, and an employee's jacket hanging on food storage unit next to single use articles.
