Violations: 4-1A, Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] In the walk in cooler raw beef found stored above open package of ready to eat hot dogs, raw beef and bacon stored above cheese and milk, and raw shrimp thawing above package of ready to eat soup and lobster mix. In addition in the 2 door cooler portioned raw eggs were stored above ready to eat potatoes and cheese sauce. The person in charge rearranged all these items to the proper storage order and was given a storage chart to review and post if needed. All raw items should be separated from ready to eat items and raw items should be separated by internal cook temperature to help prevent possible cross contamination. Corrected On-Site. New Violation. 11A, Violation of Code: [.04(6)(e) ] Ribs observed cooling in tight wrappings and sliced and diced tomatoes were found cooling in deep containers and were not making proper cooling progress. The person in charge discarded the ribs as they did not make temperature and removed the tomatoes and placed them on shallow open pans to finish cooling. Potentially hazardous foods must properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.). Corrected On-Site. New Violation. 14A, Violation of Code: [.04(4)(k) ] Utensils found stored in room temperature water that did not have a water flow at the time of inspection. The person in charge turned on the water so that it was properly flowing. Violations: 4-2B, Violation of Code: [.05(7)(b) ] Cooked chicken wings were stored in a container with Wednesday’s time stamp held at room temperature for about ten hours without cleaned in between use. Food contact surfaces must be cleaned at least every four hours for potentially hazardous foods. The employee decided to discard the foods. Corrected On-Site. New Violation. 11A, Violation of Code: [.04(6)(e) ] In-house white sauce stored at room temperature to cool decreased temperature to 23 degrees within 1 hour. Potentially hazardous foods must be properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.). The employee decided to place the sauce in the walk-in cooler. Corrected On-Site. New Violation. 11C, Violation of Code: [.04(6)(c)] Raw chicken breast thawing in the 3-compartment sink for 30 minutes, temped 60F. Hanging thermometer in hot/cold food storage unit must be located to measure the air temperature at the coolest part of the unit. New Violation. 12C, Violation of Code: [.04(4)(m) ] Wiping cloth container with 0 ppm of chlorine present. In-use, wet wiping cloths must be stored in an approved sanitizing solution. Ambient air tempurature of the equipment must be maintained at or below 41F. Nonfood-contact surfaces of equipment not kept free of an accumulation of dust, dirt, food residue, and other debris. Repeat Violation.
