During slow periods of business, place lids onto the garbage containers inside the restaurant. The garbage must be covered when not in use to prevent pests from being attracted to the food preparation areas.  New Violation. 18, Violation of Code: [.07(5)(k) ] Roaches are dwelling inside the floor drain underneath the vegetable prep sink. Roach was observed crawling inside the basin of the vegetable sink. When the owner ran water inside the sink, several roaches emerged from underneath the drain grate. Clean the drain and contact pest control operator to treat that area. The presence of insects, rodents, and other pests must be controlled to minimize their presence on the premises by: 1. Routinely inspecting incoming shipments of food and supplies; 2. Routinely inspecting the premises for evidence of pests; 3. Using methods, if pests are found, such as trapping devices or other means of pest control; and 4. Eliminating harborage conditions.  New Violation.

The employee decided to discard the foods.  Corrected On-Site.  New Violation. 6-1D, Violation of Code: [.04(6)(i) ] Cooked chicken wings and cooked tempura chicken under time as a public health control for 30 minutes without initial and discard times. Time controls must be documented according to written procedures. The employee decided to mark with the foods.  Corrected On-Site.  New Violation. 11A, Violation of Code: [.04(6)(e) ] Cooked chicken wings cooling at a room temperature of 90F did not reach 70F within 2 hours. Potentially hazardous foods must be properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.).
