Recent Restaurant Inspections Reveal Roach Particles and Filthy Conditions

Restaurant inspections, including school cafeterias, in Snellville for Nov. 26 - Dec. 3.

Results of recent Gwinnett County restaurant inspections in Snellville by East Metro Public Health with a synopsis of deficiencies found by the inspector. These are reports over the past week.

Name: American Deli
Location:  3425 Centerville Highway Suite 3D
Score:  70/C
Previous Scores:  81/B, 82/B
Deficiencies observed:  The person in charge left the establishment and did not designate a person in his place. Opened, commercially packaged American cheese and ham opened on Friday without stated day on the packages. Quat was measured above 400 ppm (strip turned blue). According to the manufacturer the concentration should be 200 ppm for food contact surfaces. Chemical sanitizer used for food-contact surfaces not meeting the requirement as a food contact surface sanitizer. Pangasius is listed as catfish on the menu. Foods are not honestly presented.  Inspection score of 88 is posted instead of current score of 81. Buildup of grease at the fryer oil cabinets and the hood vent, buildup of dirt present on the chest freezer. Nonfood-contact surfaces of equipment not cleaned at a frequency necessary to preclude accumulation of soil residues. Hood ventilation system with a buildup of grease present. Back door propped open with a large stones. Pests are not minimized. Container of Diet Coke with expiration date of 7/9/12 in the soft drink storage area. Heavily soiled drink nozzles were cleaned during the inspection. REPEAT VIOLATIONS MAY LEAD TO PERMIT SUSPENSION.

Deficiencies observed: AMF was shut down on Dec. 3 after the following violations: Observed hand sink and soap dispenser at front near vegetable prep sink dirty. Plumbing fixtures shall be cleaned as often as necessary to keep them clean. Observed many containers storing food dirty.  Observed properly date marked foods (sliced deli meats, sliced cheeses, salsa) held over 7 days after opening commercial package. 

Name: Baby Jane's Home Cooking

Deficiencies observed: Cold TCS foods held on the buffet under time as a public health control have been left in service in excess of the four hours stipulated in the health regulations AND the written procedure on file in the restaurant. The dishwashing machine is unclean with accumulated food debris inside the cleaning chamber. Food residue and food splatter is coating several pieces of equipment throughout the kitchen (the doors, handles, and gaskets of the upright coolers, the doors and handles of reach-in freezers, the shelving directly above the prep table where flavorings are held, the storage shelves inside of the walk-in cooler, the storage shelves inside the 2-door cooler, etc). The floors, walls, and ceilings throughout the prep area (near cooking equipment and prep tables, inside the walk-in cooler, etc) are unclean with splatter and debris which is not being cleaned frequently enough. Blood and spilled food is at the walk-in cooler floor. Food splatter has decorated the walls at the meat prep area above the large reach-in freezer. The filters at the ventilation hood are heavily coated with debris and residue.

Deficiencies observed: Sanitizer solution in buckets below 100 ppm. Redid sanitizer buckets to correct solution. A chemical sanitizer in solution must meet the requirements by the code and manufacturer.

Previous Scores:  70/C (Nov. 27), 90/A: Previous violationsPerson in charge could not answer questions on employee health policy. Observed employee not washing hands prior to putting on gloves. Multiple potential hazardous foods held above 41°F in reach SOBO cooler. Food discarded into trash. Observed bananas, tea bags, and lollipops stores next to hand sink with no splash guard for protection. Observed OTC medicines and cell phone stored on food shelves.

Deficiencies observed: Buildup of grease present at the wok station and fryer areas. Nonfood-contact surfaces of equipment not kept free of an accumulation of dust, dirt, food residue, and other debris.  Acoustical cleanable ceiling tiles are placed over the wok area. Replace the ceiling tiles with nonabsorbent tiles that are easily cleanable and smooth. Walls have a buildup of grease present. Facility is not maintained clean.

Deficiencies observed: Potentially hazardous foods holding in the walk-in cooler were over 41F. Employees were observed leaving the walk-in door open when entering. A paint brush was being used as a food brush. This is not an approved surface for food. The bristles were deteriorated and the metal connection to the wood was loose. There was food inside several crevices of the brush. District Epidemiology and Environmental Health investigated a complaint lodged on 11/29/2012.

Name: Philly Connection

Deficiencies observed: Mold on several tomatoes in the reach-in cooler. Philly steak had a final cook temperature of 140F. The meat was immediately placed back on the grill. Steak should have a final cook temperature of 155F for 15 seconds. Meat slicer had old food particles in the back compartment. Drink machine had sticky residue on the under side of the dispensers (non-food contact surfaces) and roach parts in the back compartment.No tissue in ladies restroom. Pieces of roach remnants found in the carry out containers, in the dispenser housing the electrical compartment, and on the counter. Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.

Deficiencies observed: Three skillets stored as clean under grill with visible food debris present. Employee involved in active food preparation wearing bracelets (rubberbands) on both wrists.Vegetable sink drain below sink did not have piping connecting bottom sink drain to floor drain.
