Restaurant Inspections: Summit's Wayside Tavern, Shane's Rib Shack

Restaurant inspections in Snellville for Feb. 15 - Feb. 23.

Results of recent Gwinnett County restaurant inspections in Snellville by East Metro Public Health with a synopsis of deficiencies found by the inspector. These are reports over the past week.

Name: Baby Jane's Homecooking
Location: 2054 East Main Street
Score: 85/B
Previous scores: 82/B, 87/B
Deficiencies observed: TCS foods (time/temperature controlled for safety foods) have been removed from the walk-in cooler and allowed to be resting in room temperature awaiting later preparation. Move the broccoli cheese casserole back into the cooler until an employee is ready to prepare the food. Whisks, long spoons, and ladles are stored inside room temperature water (underneath the prep table, directly across from several lunch side dishes being prepared on the stove-top). Stains from food splatter are covering the wall at the prep table (next to the large deep freezer toward the back of the kitchen).

Deficiencies observed: An employee was observed handling cash then opened the prep cooler door. Employees must wash hands at a frequency to prevent contamination of food and/or equipment. Employee was observed removing cooked chicken from the floor then handled croissant and cheese.

Deficiencies observed: Vanilla Smoothie mix at 48F. Food item discarded. Expired Food Service Permit posted. Post current permit.

Deficiencies observed: Garlic ginger mix listed on box as "keep refridgerated" and vegetable soup base used in sauce listed milk as ingredient. Organize walk-in cooler to better separate unwashed vegetables from ready to eat food items.

Deficiencies observed: Cutting board has buildup of brown debris present. Mop head is used for basting cooked meats. Materials used in the construction of food equipment must be easily cleanable. Rust is present on the shelving in the prep cooler.

Deficiencies observed: New employee was observed cooking chicken wings without being informed of the employee health policy. Precooked corn, cooked onions, cooked peppers, corned beef, american cheese, and pepper jack cheese prepared on Friday-Saturday without dates of preparation. Refrigerated, ready-to-eat, potentially hazardous food prepared and held in the establishment for more than 24 hours must be clearly marked to indicate the date by which the food must be consumed, sold, or discarded. Foods were date marked. All meats and seafood except Ahi Tuna on the menu are listed as undercooked; however, they are offered well done.
