Inspector’s remarks: Employees were not washing hands at appropriate times. An employee was observed entering the prep area with a used plate then scooped rice from a container that is used for customers to his plate. The hand sink is not used for intended purpose. The employee was observed washing hands at the vegetable sink. Employees must use the hand sink for hand washing. Ice bins, beverage dispensing nozzles and units, cooking oil storage tanks, coffee bean grinders, or water vending equipment not cleaned at a frequency necessary to preclude accumulation of soil or mold. Employee was observed rinsing raw meat from tong at the vegetable sink then placed the tong in the prep area for use. Cold-held potentially hazardous foods not maintained below 41°F. Noodles and garlic-in-oil mixture holding on the shelf or on cart at 89°F and 92°F. Hot-held potentially hazardous foods must maintain above 135F or use time as public health control. Cooked potentially hazardous foods not cooled from 135°F to 70°F within 2 hours. Container of raw shrimp cooling since 2:00 pm temped 48°F at 6:00 pm. Potentially hazardous foods prepared at room temperature must cool to 41°F within 4 hours. Refrigeration units are not holding proper temperature. Chicken wings cooling at room temperature of 89°F for 2 hours. Raw chicken thawing in the compartment sink without running water was 47 and 54°F. Various foods are stored directly on the floor in the prep area. In-use utensils for hot-held potentially hazardous foods not stored in a container of 135°F water. The air temperature of the prep cooler is 47°F. The air temperature of the walk-in cooler is 60°F. The air temperature of the refrigeration units must be 41°F or below. The hot water heater that provides water to the restroom is not working. Hot water is not provided in the restrooms.
