All foods offered cook to order or undercooked must have a proper advisory and reminder statement in all capital letters and at least an 8 font.  Corrected On-Site.  Repeat Violation. 9-2, Violation of Code: [.04(6)(k) ] Facility is using Reduced oxygen packaging for cooked meats. A variance is in process with the state but has not yet been approved. Meats on ROP have been put on hold until documentation is provided. Variance must be given to do reduced oxygen packaging.  Corrected On-Site.  New Violation. 14B, Violation of Code: [.05(10)(a) ] Several containers "wet-nested". containers separated to air dry. After washing and sanitizing equipment should be air dried before stacking.  Corrected On-Site.  New Violation.
