Which Wich Fails Restaurant Inspection for Incompetence

Restaurant inspections, including school cafeterias, in Snellville for Dec. 3 - Dec. 9.

Results of recent Gwinnett County restaurant inspections in Snellville by East Metro Public Health with a synopsis of deficiencies found by the inspector. These are reports over the past week.

Name: Checkers
Location:  1947 Scenic Highway
Score:  72/C

Deficiencies observed: Employee at the french fry station is handling the cartons by placing finger inside the carton. Several TCS foods (time/temperature controlled for safety foods) are not being maintained at proper temperature: cheese slices, hot dogs,whipped cream, etc in the reach-in cooler and the walk-in cooler. Stacks of cheese were placed under time as a conrol (four hour rule) without having a starting temperature of 41F or less. There were no inspection reports posted in the drive-thru windows upon arrival. In-use utensils for the ice cream dessert station are stored in tepid water. Both the reach-in cooler under the prep line AND the walk-in cooler were holding TCS foods and not producing proper air temperature for this type of food.

Deficiencies observed: Potentially hazardous food items that had been cooling overnight in the walk in cooler were found to be above 41 degrees. These items including cooked onions, cooked peppers, and grilled chicken were discarded by the person in charge. Employees observed using multiple pairs of single use gloves when working with food.

Deficiencies observed:  Potentially hazardous food items that had been cooling overnight in the walk in cooler were found to be above 41 degrees. These items including cooked onions, cooked peppers, and grilled chicken were discarded by the person in charge. Potentially hazardous food items that did not make proper cooling parameters were found cooling on rack in covered pans. Employees observed using multiple pairs of single use gloves when working with food.

Deficiencies observed:  Buildup of grease in the fryer cabinets, (b) buildup of ice in the ice cream freezer. Nonfood-contact surfaces of equipment not kept free of an accumulation of dust, dirt, food residue, and other debris. Lid is missing from the ice cream freezer.

Deficiencies observed: Soft drink dispensing nozzles with buildup of debris present. Dicer stored on the shelf above the dish sink with visible food debris between the base and blade and some debris present on the blade. Scoop for grits stored in water temperature of 114F for about 30 minutes. Ice scoop handle in the drive-thru ice bin in direct contact with ice.

Deficiencies observed: Dead fruit flies observed in bottom of several bottles of the open and in use liquor in the bar area. The person in charge discarded the contaminated bottles. The person in charge stated that the liquor is not currently being capped when not in use. The person in charge was advised to place cap/cover on bottles to help prevent possible contamination from sources such as fruit flies. Facility is using food flavorings for drinks and teas.

Beverage dispenser, at the drive-thru presentation window, does not have the protective caps on the tops of each stall. Add plastic wrap or adequate covering until the caps can be installed.

At the time of inspection only a copy of a Servsafe certificate was posted. Dining counters/tabletops not cleaned and sanitized routinely after removing all soiled tableware. Cold-held potentially hazardous foods not maintained below 41oF. At the time of inspection double handsink in kitchen area had no hot water.

Person in charge unable to demonstrate knowledge of food borne illness prevention. Could not explain cooling process for pH. Tomatoes placed in a shallow pan to continue cooling within time parameters. Observed employee putting on gloves without washing hands and then prepping sandwich. Person in charge could not explain employee health policy. Observed toxic chemicals stored on shelf with food or above food. Observed potato chip boxes and basket of bagged chips stored on floor in the office. Observed packages of brown paper bags used for food stored on floor in office.
